These cupcakes have “spring” written all over them.
They are full of coconut and lemon taste, they are light, adorable and easy to make. I usually turn to them when I’m asked to bake something pretty for guests and I don’t have much time for anything elaborate.
The original recipe calls them “muffins”, but I think that topping them with white chocolate and coconut places them in the cupcake category.
Coconut Lemon Cupcakes

Ingredients for 7-8 cupcakes:
- 150g flour
- 70 g sugar
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- a pinch of salt
- 8 tablespoons (56g) desiccated coconut
- 2 eggs
- 120g melted butter
- 50ml lemon (or lime) juice
- zest from 2 lemons (or limes)
Topping:
- 80g white chocolate, melted
- a couple of tablespoons of desiccated coconut
- Preheat the oven to 350ºF.
- In one bowl whisk the dry ingredients, in the other bowl mix the wet ones.
- Combine them, be careful not to over mix.
- Fill lined muffin pan with the batter and bake for about 20 minutes.
- Remove from the oven and allow to cool on a wire rack.
- When cool, spread melted white chocolate on top and sprinkle with coconut.

Składniki na 7-8 babeczek:
- 150 g mąki
- 70 g cukru
- ½ łyżeczki proszku do pieczenia
- ¼ łyżeczki sody oczyszczonej
- szczypta soli
- 8 łyżek (56g) wiórków kokosowych
- 2 jajka
- 120 g roztopionego masła
- 50 ml soku z limonki lub cytryny
- skórka otarta z 2 cytryn/limonek
Polewa:
- 80 g białej czekolady, roztopionej
- kilka łyżek wiórków kokosowych
- Rozgrzej piekarnik do 180ºC.
- Wymieszaj składniki suche w jednej misce, a w drugiej mokre.
- Następnie wymieszaj je ze sobą, nie mieszając ich jednak zbyt długo.
- Przelej do formy na muffiny wyłożonej papilotkami.
- Piecz około 20 minut, po czym przełóż na kratkę do wystudzenia.
- Posmaruj babeczki roztopioną czekoladą, po czym posyp wiórkami.

unsweetened 🙂 I don’t think we even have sweetened coconut in Poland, that’s why I didn’t specify, haha. sorry ’bout that 😉
