I’m taking a (very short, unfortunately) break from studying, to post a recipe for this amazing cake. I baked it a couple of days ago, back when I actually had some free time. Can you feel my desperation? 1 exam is behind me, only.. 5 more to go. Oh.
Anyway, back to the recipe. It comes together in minutes, you only dirty one dish and you don’t need any fancy ingredients to prepare it. Basically, it’s all my blog is about.
And there are strawberries! Like, fruit! And very little butter! Which makes it totally healthy.
Do try it, I’m sure you’ll like it. It’s my first Fiesta Friday post as well.. It technically is Saturday already, but you know. Exams.

Simple Strawberry Cake

Ingredients:
- 6 tablespoons butter, at room temperature
- ¾ cup sugar
- 1 large egg
- ½ cup buttermilk
- 1 teaspoon vanilla extract
- 1 ½ cups flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 pound strawberries, hulled and sliced
- 1 tablespoon sugar, for sprinkling on top of cake
Preparation:
- Preheat the oven to 350F.
- In a large bowl, cream together butter and sugar, until light and fluffy. Add the egg, buttermilk, and vanilla extract and mix.
- Add in the flour, baking powder, and salt and mix until the batter comes together.
- Transfer the batter to a greased 9inch round pan. Arrange strawberries on top of the batter, and sprinkle them with 1 tablespoon of sugar.
- Bake for 10 minutes in 350, then reduce the temperature to 325 and keep baking for additional 30-35 minutes, or until firm and golden brown at the top.

Składniki:
- 85gram masła, w temperaturze pokojowej
- ¾ szklanki cukru
- 1 duże jajko
- ½ szklanki maślanki
- 1 łyżeczka ekstraktu z wanilii
- 1 ½ szklanek mąki
- 1 ½ łyżeczek proszku do pieczenia
- ½ łyżeczki soli
- 450gram truskawek, pokrojonych i bez szypułek
- 1 łyżka cukru, do posypania ciasta
Przygotowanie:
- Rozgrzej piekarnik do 180ºC.
- W dużej misce wymieszaj masło i cukier, aż masa będzie lekka i puszysta. Dodaj jajko, maślankę, i ekstrakt z wanilii, po czym wymieszaj.
- Dodaj mąkę, proszek do pieczenia, i sól i mieszaj aż ciasto się połączy.
- Umieść ciasto w okrągłej foremce o średnicy 20cm. Ułóż truskawki na cieście, po czym posyp je łyżką cukru.
- Piecz przez 10 minut w 180ºC, po czym zmniejsz temperaturę do 160ºC i piecz jeszcze przez 30-35 minut, lub aż ciasto będzie złociste na wierzchu.
