Brown Butter Caramel Bars

This week I celebrated my graduation with caramel. I’ve found a great recipe for caramel a couple of days ago and I’ve been putting it in everything since then. The only thing I’ve changed in it was reducing the amount of salt, so it’s not actually salted caramel anymore. Still, it’s up to you.
These particular bars are very simple, the dough is just brown butter, flour, brown sugar and oats (plus baking soda and salt), so I’m guessing you have all of the ingredients already.

The caramel is just slightly more work, but it’s all still pretty straightforward. I’m in love with this recipe.

Brown Butter Caramel Bars

Ingredients:

  • ½ cup butter, browned (instructions below)
  • ¾ cup brown sugar
  • 1 cup flour
  • 1 cup oats
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 (or 1 ½, go crazy) batch of caramel (I omitted the salt)

Preparation:

  1. Preheat the oven to 350°F.
  2. To brown the butter, first melt it in a small pot over a medium heat. Butter will crackle and pop as the water melts out of it. Once that passes, the butter will settle down and begin to quickly brown and smell nutty. Once it does, remove it from heat and let cool for a couple of minutes in a bowl.
  3. Once it cools, whisk in the sugar.
  4. Add the flour, oats, baking soda, and salt and mix until the dough comes together.
  5. Transfer ¾ of the batter into greased (or lined with parchment paper) 9×9 baking dish.
  6. Bake for 10 minutes, after which remove from the oven.
  7. Pour the caramel over the surface, crumble with the remaining dough and return to the oven for about 15 minutes.

Składniki:

  • 100 gram masła, brązowego (instrukcja poniżej)
  • ¾ szklanki brązowego cukru
  • 1 szklanka mąki
  • 1 szklanka płatków owsianych
  • 1 łyżeczka sody oczyszczonej
  • szczypta soli
  • 1 (lub 1 ½, jeśli chcesz zaszaleć) porcja karmelu (ja pominęłam w tym przepisie sól)

Przygotowanie:

  1. Rozgrzej piekarnik do 170°C.
  2. Masło rozpuść w garnuszku nad średnim ogniem. Masło zacznie trzaskać i strzelać, gdy będzie się z niego wytapiać woda. Gdy to minie, masło się uspokoi i zacznie szybko brązowieć i pachnieć orzechowo. Gdy całkiem zbrązowieje zdejmij je z ognia, przelej do miski i pozwól mu stygnąć przez kilka minut.
  3. Do masła dodaj cukier.
  4. Dodaj mąkę, płatki owsiane, sodę oczyszczoną, i sól i wymieszaj, aż składniki się połączą.
  5. Przenieś ¾ ciasta do natłuszczonej (lub wyłożonej papierem do pieczenia) foremki 20x20cm.
  6. Piecz przez 10 minut, po czym wyjmij z piekarnika.
  7. Wylej na ciasto karmel, posyp resztą ciasta i ponownie umieść w piekarniku, na ok. 15 minut.

I have bookmarked these, I adore caramel, and love that they have oats in it, so I can eat a batch all by myself and tell myself that it is healthy :)). Seriously, I will definitely make it today.
