My mom brought this recipe from her yoga classes. Everytime she does so I’m quite worried the dessert won’t turn out tasty, as there is usually no sugar, chocolate nor butter in there, but this one was a pleasant surprise.
We made it for a family gathering a couple of weeks ago and everyone seemed to enjoy it, so I thought I would bring it over for this week’s Fiesta Friday.
I especially loved the bottom part of the dessert, which was very sweet due to dates. I didn’t even add any honey! It’s safe to say this recipe is a keeper.
Nutty Strawberry Date Dessert
Ingredients:
- 1 cup cashews
- 2 cups dried dates
- 1-2 tablespoons coconut oil
- 2.2 pounds frozen strawberries, thawed
- gelatin (the amount accordingly to the wrapper – you need enough for the strawberries)
Preparation:
- First, soak the cashews for a couple of hours or overnight.
- Blend them with dates and add the coconut oil, till you reach a smooth consistency.
- Transfer the mixture to a round cake tin.
- To prepare the top, blend the strawberries in a pot, until smooth. Add gelatin and place the mixture over a medium heat for a couple of minutes. I didn’t add any additional sugar, or honey, but it’s up to you.
- Pour the top part onto the bottom one and place the tin in the fridge until firm.
Składniki:
- 1 szklanka orzechów nerkowca
- 2 szklanki suszonych daktyli
- 1-2 łyżki oleju kokosowego
- 1kg mrożonych truskawek, rozmrożonych
- żelatyna (ilość według opakowania – potrzebujesz jej wystarczająco dużo na kilogram truskawek)
Przygotowanie:
- Najpierw namocz nerkowce, przez kilka godzin lub przez całą noc.
- Zblenderuj je razem z daktylami i olejem kokosowym, aż masa będzie miała gładką konsystencję.
- Przenieś masę do okrągłej foremki na ciasto.
- By przygotować górną część, zblenderuj truskawki w garnku. Dodaj do nich żelatynę, po czym umieść garnek nad średnim ogniem na kilka minut. Ja nie dodawałam cukru ani miodu, ale to zależy od Twoich preferencji.
- Zalej dolną część ciasta górną i wsadź do lodówki aż wszystko stwardnieje.
