Carmelitas

In a little over a month I’ll move to Vietnam for a year, to teach English. It seemed like a long time from now, but today I started to get my things together for the trip, and it suddenly has gotten way closer. I can’t wait, but I’m also pretty anxious.. Which is why I needed caramel and chocolate.

This recipe is perfect, because the dough is very quick and easy to prepare, while the caramel tastes amazing. Of course chocolate makes it all that much better.

The only problem is.. It seems like I might not have an oven in Vietnam. Can you imagine a year without an oven? Now that would be awful, wouldn’t it?

  2. Combine the melted butter with sugar.
  3. Add the flour, oats, baking soda, and salt and mix until the dough comes together.
  4. Transfer half of the batter into greased (or lined with parchment paper) 9×9 baking dish.
  5. Bake for 10 minutes, after which remove from the oven.
  6. Sprinkle with chocolate chunks, and pour the caramel over the chocolate.
  7. Crumble rest of the dough over the caramel and return to the oven for about 15 minutes, until the bars are starting to brown.
