Anyone else can’t wait till August? It seems like all the fun stuff planned for this summer will be happening then. My brothers wedding, a couple of parties, a visit from my best friend, my move to Vietnam.. Everything will happen very quickly. But for now, I’m just sitting at home, going through my favorite recipes, trying to decide what to bake next.

These cookies are very easy. You don’t need any fancy ingredients to prepare them, which is why I baked them a couple of days ago. It was like 10PM, I was at home with my mom and we suddenly decided that we need to eat some cookies. These were ready half an hour later.

I added everything that came to my mind, resulting in very tasty, yet a bit.. Unconventional, maybe? Cookies. Let me know if you try them!

Brown Butter Cocoa Coffee Cookies

Ingredients:

  • ½ stick of butter, browned (instruction below)
  • 6 tablespoons cocoa powder
  • ½ cup white sugar
  • 1/3 cup brown sugar
  • 1 teaspoon instant coffee granules
  • 1/3 cup Greek yogurt
  • 1 cup flour
  • ¼ teaspoon baking soda

Preparation:

  1. Preheat the oven to 350F.
  2. To brown the butter, first melt it in a small pot over a medium heat.  Butter will crackle and pop as the water melts out of it. Once that passes, the butter will settle down and begin to quickly brown and smell nutty. Once it does, remove it from heat and let cool for a couple of minutes in a bowl.
  3. Whisk in the cocoa powder, both sugars, and coffee granules, and mix. Add the Greek yogurt, stirring until combines. Add the flour and baking soda, mixing until the dough comes together.
  4. Drop tablespoonfuls of the dough on a prepared baking sheet.
  5. Bake for 8-10 minutes, until the cookies are set.

Składniki:

  • 60 gram masła, brązowego (instrukcja poniżej)
  • 6 łyżek kakao
  • ½ szklanki cukru
  • 1/3 szklanki brązowego cukru
  • 1 łyżeczka granulek kawy rozpuszczalnej
  • 1/3 szklanki jogurtu Greckiego
  • 1 szklanka mąki
  • ¼ łyżeczki sody oczyszczonej

Przygotowanie:

  1. Rozgrzej piekarnik do 170°C.
  2. Masło rozpuść w garnuszku nad średnim ogniem. Masło zacznie trzaskać i strzelać, gdy będzie się z niego wytapiać woda. Gdy to minie, masło się uspokoi i zacznie szybko brązowieć i pachnieć orzechowo. Gdy całkiem zbrązowieje zdejmij je z ognia, przelej do miski i pozwól mu stygnąć przez kilka minut.
  3. Do masła dodaj kakao, oba cukry, i granulki kawy, i wymieszaj. Dodaj jogurt Grecki, mieszając aż składniki się połączą. Dodaj mąkę i sodę oczyszczoną i wymieszaj, aż utworzy się jednolite ciasto.
  4. Pełne łyżki ciasta układaj na blaszce do pieczenia.
  5. Piecz przez 8-10 minut.
