Single Serving Peanut Butter Cookie

It’s late, most of the shops are closed, but you need a cookie. Just one would be enough, as long as it’s really good. I’m sure you’re familiar with that feeling, right? This recipe was created for exactly this kind of evening.

It makes just one cookie, and it’s quite healthy – instead of butter it uses Greek yogurt. You don’t miss it at all though, as the taste is still just right. Then again, it’s hard to get bad results when there is peanut butter involved.

Single Serving Peanut Butter Cookie

Ingredients:

  • 1 ½ tablespoon peanut butter
  • 2 tablespoon flour
  • 1 ½ tablespoon brown sugar
  • 1/8 teaspoon baking soda
  • 1 tablespoon nonfat Greek yogurt
  • a pinch of granulated sugar, for sprinkling

Preparation:

  1. Preheat the oven to 350F.
  2. In a bowl, combine peanut butter, flour, brown sugar, baking soda, and Greek yogurt.
  3. Flatten into a disc and place on a prepared baking sheet. Make grid marks with a fork and sprinkle with granulated sugar, to add chewiness.
  4. Bake for about 10 minutes. Let cool to firm up a bit before eating.

Składniki:

  • 1 ½ łyżki masła orzechowego
  • 2 łyżki mąki
  • 1 ½ łyżki brązowego cukru
  • 1/8 łyżeczki sody oczyszczonej
  • 1 łyżka beztłuszczowego jogurtu Greckiego
  • szczypta cukru, do posypania

Przygotowanie:

  1. Rozgrzej piekarnik do170°C.
  2. W misce wymieszaj masło orzechowe, mąkę, brązowy cukier, sodę oczyszczoną i jogurt Grecki.
  3. Stwórz z ciasta dysk i połóż na przygotowanej blaszce do pieczenia. Zrób na ciastku charakterystyczny wzorek widelcem i posyp je cukrem.
  4. Piecz przez ok. 10 minut. Przed zjedzeniem pozwól mu trochę ostygnąć, by się nie rozsypało.
