Is everybody deep into the Christmas mode already? Probably, right? I will let you in on a little secret – I haven’t bought any gifts yet. I’m going shopping tomorrow, which is pretty much the last possible moment to do so. This year I’m even worse than last time! Fortunately when it comes to testing out the Christmas recipes, I’m doing better. I made these cookie bars almost two weeks ago and they were heavenly. Gingerbread Cookie Bars2

The original recipe calls for either sprinkling them with chocolate, or putting Twix candy bars on them, so I tried both. I liked both options a lot, so I will let you choose for yourself. Gingerbread Cookie Bars8

I love gingerbread with really distinct taste, so even though this recipe makes just half of the original batch, I kept the same amount of cinnamon and added ginger. I don’t need that many bars laying around in my house, after all there are just three people here. Also, I obviously reduced the amount of sugar, as American recipes tend to be too sweet for us.

Anyway, we totally loved these bars! They are perfect for Christmas or for any other time, if you’re like me and you like to eat gingerbread regardless of what time of year it is 🙂

Gingerbread Cookie Bars

  • Servings: 9 generous squares
  • Print

Adapted from Crazy For Crust

Ingredients:

  • 1/3 cup granulated sugar
  • 1 stick butter, softened
  • ½ cup molasses
  • 1 egg
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground ginger
  • 2 cups all-purpose flour
  • ½ cup white chocolate

OR

  • 12 fun size Twix (or other candy bars)

Preparation:

  1. Preheat oven to 350F.
  2. In a large bowl, beat sugar, butter, and molasses together. Add the egg, salt, baking soda, cinnamon, and ginger. Mix until combined. Add the flour and mix until the dough comes together.
  3. Press dough into greased (or lined with parchment paper) 9×9 baking dish and place in oven for 12-15 minutes.
  4. Remove from the oven. If using, press fun size Twix bars onto the gingerbread, making equal rows.
  5. Optionally, just cut the gingerbread into bars and allow to cool for a couple of minutes. Melt chocolate and drizzle it over the bars.

Składniki:

  • 1/3 szklanki cukru
  • 100 gram miękkiego masła
  • ½ szklanki melasy
  • 1 jajko
  • ¼ łyżeczki soli
  • ¼ łyżeczki sody oczyszczonej
  • 1 łyżka cynamonu
  • ½ łyżeczki imbiru
  • 2 szklanki mąki
  • 100 gram białej czekolady

LUB

  • 12 Twixów fun size (lub innych batoników)

Przygotowanie:

  1. Rozgrzej pierkarnik do 170°C.
  2. W dużej misce wymieszaj cukier, masło i melasę. Dodaj jajko, sól, sodę oczyszczoną, cynamon i imbir. Wymieszaj i dodaj mąkę, mieszając aż ciasto się połączy.
  3. Umieść ciasto w natłuszczonej (lub wyłożonej papierem do pieczenia) foremce 20x20cm. Piecz przez 12-15 minut.
  4. Wyjmij ciasto z piekarnika. Jeśli ich używasz, ułóż Twixy na cieście w równych rzędach.
  5. Jeśli wolisz wersję z białą czekoladą, pokrój ciasto na kawałki i pozwól im trochę ostygnąć. Rozpuść czekoladę i ozdób nią ciasto.
