Not gonna lie, I am very excited.
My best friend and I are leaving for Scotland on Saturday. We’re going to both Glasgow and Edinburgh, seeing one of my favorite bands (again), and we’re generally going to have a blast. That’s the extent of our plans.
Both of us have degrees in English (and are geeky about it), so we are going to be perfectly happy just wandering around cities and soaking up as much culture as possible.
Anyway, that’s where my head is at right now, but let’s focus on the new recipe I have for you instead.
These cookies are one of my new favorites. They are vegan, but the people I gave them to couldn’t even tell. I baked them in ramekins, so instead of about 12 regular cookies I got 4 huge ones. That’s just the matter of preference – I love using ramekins when I make cookies. Sometimes I put some more chocolate or peanut butter in the middle of the dough as well, the results are glorious.
Anyway, here is the recipe!
Vegan Chocolate Chip Cookies
Adapted from The Vegan Eight
Ingredients:
- ¾ cup rice flour
- 2 teaspoons baking powder
- 2 tablespoons brown sugar
- ½ cup vegan chocolate chips
- ¾ cup peanut butter (or almond butter)
- 4 tablespoons agave syrup
- 1 tablespoon regular molasses
Preparation:
- Preheat the oven to 350F.
- Combine peanut butter, agave syrup, molasses and brown sugar, mixing until smooth.
- Add rice flour and baking powder, mixing until the dough comes together. You can add a tablespoon of water if needed.
- Fold in the chocolate chips.
- Divide the dough into 4 ramekins and bake for about 10 minutes or until the cookies start to brown.

Składniki:
- ¾ szklanki mąki ryżowej
- 2 łyżeczki proszku do pieczenia
- 2 łyżki brązowego cukru
- 100g wegańskiej czekolady
- ¾ szklanki masła orzechowego (lub migdałowego)
- 4 łyżki syropu z agavy
- 1 łyżka melasy
Przygotowanie:
- Rozgrzej piekarnik do 170C.
- Wymieszaj masło orzechowe, syrop z agavy, melasę, i brązowy cukier, aż składniki się połączą.
- Dodaj mąkę ryżową i proszek do pieczenia, mieszając do powstania ciasta. Możesz dodać łyżkę wody, jeśli ciasto jest zbyt suche.
- Dodaj pokrojoną czekoladę.
- Podziel ciasto między cztery ramekiny i piecz przez ok. 10 minut, lub aż ciastka zaczną się robić brązowe.
