How is your January going so far? Mine’s been pretty busy. I got a new job (yay!) and I spent the last couple of days taking care of all the formalities before I get to start working. Fortunately I did have time to meet with my friends a couple of times. I made these cookies for one of such occasions, when I promised a friend I would bake him something.

Cranberry Walnut Cookies8I’ve been on a nut kick lately, so most of my recent recipes contain some kinds of nuts. These cookies obviously have walnuts, so adding cranberries seemed like a prefect combo.

My friend liked them a lot and so did I, so I’m going to write these down as a win.

Cranberry Walnut Cookies

Ingredients:

  • 2 ½ oz butter, softened to room temperature
  • 1/4 cup sugar
  • 1/3 cup brown sugar
  • 1 egg
  • ½ teaspoon vanilla
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ tablespoon cornstarch
  • ¼ teaspoon salt
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts

Preparation:

  1. Preheat the oven to 350F.
  2. In a big bowl, mix softened butter and both sugars. Add in the egg and vanilla.
  3. In a separate bowl combine flour, baking soda, baking powder, cornstarch and salt.
  4. Mix in the dry ingredients to the wet ones. Once the dough comes together, add in the cranberries and walnuts.
  5. Drop tablespoons of the batter on a prepared baking sheet and bake for about 10-14 minutes, or until golden.

Składniki:

  • 70 gram miękkiego masła
  • ¼ szklanki cukru
  • 1/3 szklanki brązowego cukru
  • 1 jajko
  • ½ łyżeczki ekstraktu z wanilii
  • 1 szklanka mąki
  • ½ łyżeczki sody oczyszczonej
  • ¼ łyżeczki proszku do pieczenia
  • ½ łyżki skrobi kukurydzianej
  • ¼ łyżeczki soli
  • ½ szklanki suszonej żurawiny
  • ½ szklanki posiekanych orzechów włoskich

Przygotowanie:

  1. Rozgrzej piekarnik do 170C.
  2. W dużej misce wymieszaj miękkie masło i oba cukry. Dodaj jajko i wanilię.
  3. W osobnej misce wymieszaj mąkę, sodę oczyszczoną, proszek do pieczenia, skrobię kukurydzianą i sól.
  4. Połącz suche składniki z mokrymi. Gdy ciasto będzie jednolitej konsystencji, dodaj żurawinę i orzechy.
  5. Układaj łyżki pełne ciasta na przygotowanej blaszce, i piecz przez ok. 10-14 minut, aż ciastka zrobią się złote.
