Can you believe we’re already 1/3 through October? Time is running so fast lately, it’s unbelievable. I’m quite busy with work nowadays, which is actually pretty fun – teaching in Vietnam has been an incredible experience.

As I was writing that I got a text from one of my students, haha. They are really excited about learning, which makes my job that much easier.

Anyway, I thought I would share another recipe I used back when I was in Poland. It’s for plum bars with rich, buttery base. The dough comes together in seconds, the filling is pretty straightforward too – and you get amazing bars really quickly. Also, as they have cinnamon and other spices, I think they work perfectly during autumn.

Plum Crumb Bars

Ingredients:

Crust:

  • ½ cup sugar
  • 2 ½ cups flour
  • ¼ tsp salt
  • 3/4 cup butter, softened and cut into small pieces
  • 1 egg, beaten

Filling:

  • 3 ½ cups fresh red plums, diced
  • 1 Tbsp sugar
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1/8 tsp ginger
  • 4 tsp cornstarch

Preparation:

  1. In a big bowl, combine sugar, flour, and salt. Add butter and egg, and mix until the dough comes together. Press half of it into the greased (or lined with parchment paper) 9×13 baking dish.
  2. To make the filling, mix sugar, spices and cornstarch in a bowl. Add the diced plums and stir together. Pour the filling over the crust, and crumble the rest of the dough on top.
  3. Bake for about 40 minutes, or until the top is golden brown.

Składniki:

Ciasto:

  • ½ szklanki cukru
  • 2 ½ szklanki mąki
  • ¼ łyżeczki soli
  • 150gram masła, miękkiego i pokrojonego na małe kawałki
  • 1 jajko, ubite

Nadzienie:

  • 3 ½ szklanek świeżych śliwek, pokrojonych
  • 1 łyżka cukru
  • ½ łyżeczki cynamonu
  • ¼ łyżeczki gałki muszkatołowej
  • 1/8 łyżeczki imbiru
  • 4 łyżeczki skrobi kukurydzianej

Przygotowanie:

  1. W dużej misce wymieszaj cukier, mąkę, i sól. Dodaj masło i jajko, ugniatając aż ciasto się połączy. Umieść połowę ciasta w natłuszczonej (lub wyłożonej papierem do pieczenia) foremce o rozmiarach ok. 20×30.
  2. By przygotować nadzienie, wymieszaj w misce cukier, przyprawy i skrobię kukurydzianą. Dodaj pokrojone śliwki i wymieszaj. Wyłóż masę na ciasto, po czym pokrusz pozostałe ciasto na owoce.
  3. Piecz przez ok. 40 minut, lub aż góra zrobi się złocisto brązowa.
