It’s a quite busy week for me. My brother is getting married tomorrow, and I’m moving to Vietnam in 5 days. There are a lot of things I still need to take care of before I go, but that didn’t stop me from spending some time in my kitchen.
This cake is quite usual, so I decided to play around with it a bit, by switching all the butter into coconut oil. The result was a moist, yummy cake with a palpable coconut taste. It’s nothing fancy, but I think it’s pretty, quick, and worth trying out 😉
Coconut Oil Blueberry Cake

Ingredients:
- ¼ cup coconut oil, melted
- 2/3 cup sugar
- 1 egg
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup Greek yogurt
- 1 cup fresh blueberries
Preparation:
- Preheat oven to 375F.
- In a big bowl, combine coconut oil and sugar. Add the egg.
- Add flour, baking powder, baking soda, and salt, and mix until incorporated.
- Add Greek yogurt, mixing until the batter comes together.
- Gently fold in the blueberries.
- Transfer the batter into greased (or lined with parchment paper) 9inch round cake pan. Bake for 18-25 minutes, or until the cake becomes golden.

Składniki:
- 60g oleju kokosowego, rozpuszczonego
- 2/3 szklanki cukru
- 1 jajko
- 1 szklanka mąki
- ½ łyżeczki proszku do pieczenia
- ½ łyżeczki sody oczyszczonej
- ¼ łyżeczki soli
- ½ szklanki jogurtu Greckiego
- 1 szklanka świeżych borówek
Przygotowanie:
- Rozgrzej piekarnik do 190C.
- W dużej misce wymieszaj olej kokosowy i cukier. Dodaj jajko.
- Dodaj mąkę, proszek do pieczenia, sodę oczyszczoną, i sól, i wymieszaj aż składniki się połączą.
- Dodaj jogurt Grecki, mieszając aż ciasto będzie jednolitej konsystencji.
- Delikatnie wmieszaj borówki.
- Przenieś ciasto do natłuszczonej (lub wyłożonej papierem do pieczenia) okrągłej foremki o średnicy 20cm. Piecz przez 18-25 minut, lub aż ciasto zrobi się złote.
